Another good recipe from my Mom:
Bake an empty pie shell at 400°for about 10 mins, or until lightly golden (here’s my pastry recipe, if you need one)
Set the baked shell aside to cool.
* My pie plate is very deep, so my recipe here is doubled already. If you use a small/shallower pie plate, please halve the following …
In a saucepan, combine:
1.5 cups sugar
1/3 cup cornstarch
2 pinches of salt
Whisk together, then gradually add 3 cups water, stirring well.
Cook over medium heat, stirring frequently, until thick & clear (about 5 mins).
Remove saucepan from the heat
Add 170gr strawberry jello powder
Stir until dissolved. Set aside to cool & thicken.
Wash & slice 2 lbs (1lb for a regular dish) of strawberries (Set aside 1 or 2 for garnish, if desired)
Place the berries in the cooled shell
Pour the gelatin over the berries and refrigerate until firm (about 3 hours)
Garnish with whipped cream & reserve berries
